I absolutely hated this dish growing up and have grown to associate ginger with dead fish but as taste buds change, every once in a while I get a hankering for it. As a kid, I would go to the supermarket with my aunt and watch as she would net the fish out of the tank and hand it to the man behind the counter who would then clean out the guts. The fish then traveled home with us and into the freezer where one would get taken out every morning to defrost. Washing your hands in the kitchen sink meant being careful not to accidentally splash soap on the fish. Sliced scallions and ginger would then be sprinkled across and in the fish and stored in the fridge before it finally got steamed every night.
